Light fruity fizzy fun, think turkish delight and strawberries.

De-stemmed and direct press individually then blended together. Wild ferment and bottled by gravity to finish ferment in bottle, then hand disgorged after 5 months. No added sulfur, fining or filtering.

Herbaceous, well rounded with lots of grip, some dried fruit notes and a nice caramel finish.

1⁄3 hand picked whole bunch 2⁄3 de-stemmed fermented on skins for 6 days with gentle foot stomp/pigeage daily. Pressed into stainless steel to finish off wild ferment and then transferred into old oak barrels another 5 days later to settle/age and complete malolactic fermentation. Bottled by gravity 6 months later with a tiny amount of sulfur added before bottling.

Floral aroma, melon and passionfruit zestyness balanced out with a creamy vanilla end.

Destemmed and fermented on skins for 4 days and then pressed off into stainless steel to settle. Racked off gross lees and blended with a small amount of left over chardy (20%). Aged in stainless and finished malolactic fermentation. Bottled by gravity 6 months later with a tiny amount of sulfur added before bottling.

Light and juicy cranberry and plums with a deep earthy undertone and tannin.

De-stemmed and wild fermented on skins, in stainless steel for 10 days and then gently pressed off to complete fermentation. Transferred to clay amphorae eggs to age and settle. Racked once more off gross lees back into amphorae and then bottle by gravity straight from the egg 6 months later. No adds to this one, 700 bottles only.
